Spicy Pizza Chicken

Jane says... As a mum I want supper dishes that are almost instant on occasions. This recipe is a store cupboard favourite and takes minutes to prep' and cook. It came about as a way of saying to my son Ben -  "We had pizza for tea like all the other children even though I didn't have the time to make a pizza base". 

This recipe has now become a real family favourite with the kids and hubby.

Roasting Pan

Preheated oven gas mark 6


4 Medium chicken breasts

100gm Sun dried tomatoes

50gm pitted black olives

6-8 Jalapenos from a jar

1 tbsp. olive oil

20gm Fresh basil

1 Ball good mozzarella



  1. Using a small food processor combine all the ingredients except the chicken. Add a little of the oil from the sun dried tomatoes and the jalepenos as well                                                                

  2. Put the chicken breasts in a large sandwich bag and bash with a rolling pin until flat and even all the way through                                                                  

  3. Put a little oil on each side of the chicken breast and season                   

  4. Spread on about a tablespoon of the mixture onto the top each chicken breast                                                                   

  5. Slice the mozzarella and place on top of mixture and chicken breasts                                                                            

  6. Bake in oven (gas mark 6) until chicken cooked and mozzarella golden on top. You can put it under the grill for a minute or two if you want to get cheese really golden                                          

  7. I serve with chips and a simple tomato and herb salad or a good hunk of French bread
