Baked Apples with Sultanas, Waltnuts and Golden Syrup
350g (12oz) sultanas
100g (3½oz) walnuts, chopped
2tbsp mixed spice
6-8tbsp golden syrup
Zest and juice of 1 lemon
6 Bramley apples, all roughly the same size
50g (1¾oz) unsalted butter, softened
Place the sultanas, walnuts, mixed spice, brandy and 3-4tbsp of golden syrup in a bowl and squeeze the lemon juice over.
Mix and add 4tbsp of warm water. Set aside for the sultanas to plump, and preheat the oven to gas mark 6 / 200°C (392 F) fan 180°C.
Meanwhile, wash and core the apples and place on a baking tray.
Place 1-2tbsp of fruit mixture into each apple then drizzle the remaining syrup over. Sprinkle the remaining fruit around the tray and put a knob of butter on each apple.
Bake for 1 hour until the apples are soft but not collapsing.
Serve warm with cream or ice cream, drizzled with the buttery juices and extra fruit.
